I’m a fan of hot dogs as long as they are not breaded. They are among the healthiest foods in existence. This is especially true when they are prepared with a mix of grass-fed ground beef, organic tomatoes, jalapeño peppers and a touch of coconut oil. My favorite thing about hot dogs is the fact that they are so versatile. There are so many different ways to prepare them as well as different fillings that you can add. This is why I especially love them on keto.
Low-carb and keto diets are all the rage right now; so are hot dogs. A standard hot dog on a bun is loaded with carbs, and if you add condiments, it’s in the double digits. At least, that’s what I used to think. These days, I’m a big believer in eating real food, but I still like to have my hot dogs in moderation and on low-carb buns.

Cheese dogs with jalapeño
.. : 4 SERIES
Preparation time: 5 MINUTES
Cooking time: 15 MINUTES
Total time : 20 MINUTES
- 4 very large jalapenos (or 8 small ones)
- 2 slices of American cheese
- 4 hotdogs
- Non-stick spray

Preheat the grill to medium-high heat.

Cut the hot dogs in half lengthwise – you now have eight halves.

Cut strips of American cheese the width of the hot dog and place them on the four hot dog halves. Then place another hot dog half on top of each hot dog half, creating a hot dog and cheese sandwich.

Cut off the top and bottom of each jalapeño and use a butter knife or paring knife to remove the seeds and skin inside. You get eight tubes of jalapeño.

Place two jalapeño tubes on each cheese dog.

Spray the grill with non-stick spray and place four jalapeño dogs on the grill. Close the lid and cook. Turn each dog every 3-4 minutes to ensure it is cooked on both sides.

When the peppers have softened (usually 10-15 minutes), remove them from the grill and serve.
Yield: 4, serving size: 1

- Wear oven mitts when handling jalapenos to avoid painful burns from the hot peppers.
- The longer you cook the jalapenos, the less spicy they will be. If you want them very spicy, leave them fairly crispy on the outside, but if you want them moderately spicy, bake them until soft.
- No grill? No problem. You can cook them in a pan over medium heat on the stove – leave the lid on so the peppers soften.
- We’ve tried making this dish with different cheeses and they all work really well, so you may want to add a little variety to the filling.
- These sausages are more substantial than they seem. Even if you usually eat more than one hot dog, one can fill you up.
