Bernet’s straightforward recipe

Steak and veggies in a thick, creamy sauce.

Time spent: 25 minutes

Approximately 8 servings

Calories in a single serving: 237 kcal

Instructions:

  • In a small saucepan, combine the vinegar, wine, and tarragon and bring to a boil over medium heat. Reduce until there are only approximately 2 tablespoons of liquid left. It will take approximately 15 minutes to complete this task.
  • Fill a glass measuring cup halfway with reduced vinegar (narrow enough to fit the nozzle of the hand blender). Combine the salt and egg yolks in a mixing bowl. Remove it from the equation.
  • In a small saucepan, melt the butter over medium-low heat. Shake it after it’s fully melted to get the froth off.
  • Blend in the bottom of the measuring cup with the hand blender. Continue to whisk while gradually adding the butter until you have a rich, creamy sauce. This should be a fast procedure (less than a minute).
  • Serve with meat and vegetables right away.

Steak and side dishes

  • Preheat the grill to high heat for 10 minutes.
  • Season the steak on both sides with salt and pepper, then set aside for 3 minutes.
  • Place the steak on the grill once it has been warmed, and shut the grill. Depending on the desired doneness, fry the meat for 3 to 5 minutes on each side.
  • Place the veggies in a small 6-inch skillet and season with salt, pepper, and olive oil. Cook until desired doneness is reached by placing the pan straight on the grill.
  • Enjoy the burdock sauce with your steak and veggies!
