Dark chocolate has been used as a food and medicine for thousands of years. In fact, the Aztecs used it to eat during battle to overcome their fear of death. It is regularly used in health and wellness products today, and it is known to help with stress, anxiety, depression, and even weight management.
The most important thing to remember about low carb diets is that they are not a magic pill. They are not going to make you lose weight without exercise, or without working at a healthy lifestyle. The only reason people think that low carb works is because they are working with a flawed idea of what a low carb diet is. But if you are eating healthy fats and proteins, you are looking at a diet that is supposed to be as healthy as possible. A high fat, low carb diet is not the same thing as a high fat, low calorie diet, for example.
Dark chocolate is a great source of antioxidants, and is low in carbohydrates and sugar. It also contains small amounts of caffeine, though this isn’t usually a problem. But how does dark chocolate affect your weight loss program? If you’re cutting your carb intake in line with a ketogenic diet, you might be surprised to know that the occasional treat is actually good for you.
So far, we’ve had the pleasure of eating this amazing low-carb Dark Chocolate Tart dish twice. Matt tried this dish for the first time, and it turned out perfectly. We fell in love right away. The second time was for the video, and we couldn’t bear throwing either of them away, so we ate them both. Now, if we can just find a third reason to make these other the fact that they are the ultimate dessert, we won’t feel so awful about eating so much chocolate tart in a month!
Recipe for a Simple Tart
When I hear the word tart, the first thing that comes to mind is easy. Tarts have never seemed easy to me, and I’ve never wanted to try, so this was all Matt’s doing. He was actually looking forward to trying it, and for good reason: they are absolutely wonderful. He got it right the first time, and he did it with such ease. The entire process of creating these tarts, from start to finish, is far easier than I had anticipated, and I now feel confident making them on a weekly basis or for a houseful of visitors! The immersion blender is used for the majority of the heavy work, which is then chilled. As I already stated, it’s simple.

Preheat the oven to 350 degrees Fahrenheit for the crust. Using a spatula, combine all of the crust ingredients in a small mixing basin.
Divide the crust mixture into two 4-inch tart pans and shape with your hands or a spatula to fit the pans. Up the sides of the pan, push the crust mixture.
Use a fork to poke holes in the crust and bake for 10-12 minutes, or until the edges are slightly browned.
Allow for cooling while preparing the filling.
Make the filling: in a heavy bottomed pot, heat the cream over medium heat.
Chop the chocolate finely while the cream is cooking.
Pour the cream into a narrow jar (that will suit an immersion blender) or a big measuring cup once it has reached room temperature.
With the immersion blender, mix in the chopped bakers chocolate.
