Because the top of a muffin is always the nicest part, why not skip the bottoms and only create the tops? We recognize genius.

Is Coconut Flour Safe to Use in Baking?

Coconut flour is my all-time favorite low-carb baking flour. It produces a denser baked dish and requires a little more precision than almond flour, but you’ll use less of it in the end, resulting in less carbs and calories! Coconut flour is our go-to for baked items for these reasons, as well as the fact that it is nut-free and digests easier when consumed in bulk (it happens to the best of us!).

Coconuts are strong in fat and have a delicious, subtle sweetness to them. We love coconut flour, but we’ve lately discovered that canned unsweetened canned coconut milk is also delicious in our morning bulletproof coffee and dinner meals.

Is Coconut Flour a Good Substitute for Regular Flour in Cookies?

Unfortunately, it isn’t as simple as that. To master keto baking, you’ll need some practice because the outcomes may vary greatly depending on the type of low carb flour you use and how much of it you use.

When attempting to recreate high carb treats using coconut flour or almond flour in a 1:1 ratio with ordinary flour, I’ve had hundreds of failed recipes. We do have a flour conversion chart in our Baking 101 course, which you may find on our membership site! When baking with keto flours, it’ll be a game changer.

Make Soft and Moist Cookies

Low carb baking problems are frequently caused by either an extremely dry and crumbly baked good or a baked good that is too soft and won’t keep its shape. The idea, of course, is to achieve a happy medium that produces a moist, fully cooked baked item, so we’ll start with the wet components.

Eggs are always a wonderful starting point since they provide moisture and function as a binding agent. Then there are the liquids, such as heavy cream, nut milks, and water. The sour cream, on the other hand, is the key ingredient that makes this recipe possible.

When working with a dry and absorbent flour like coconut flour, the creamy texture of sour cream will supply a lot more moisture than milk or water. It adds a lot of moisture to the batter without thinning it down!

The right blend of nutty and toasted aromas is achieved by combining coconut flour and flax seed meal, but without the nuts! After that, you add some sour cream and fresh blueberries to make the perfect coconut flour cookies for a quick dessert any night of the week!

Blueberry Muffin Tops with Coconut Flour Cookies!

Soft, rich, and packed with fresh blueberries, these blueberry muffin top coconut flour cookies are the ultimate summertime dessert!

40-minute total time

12 muffin tops (servings)

Time to Prepare: 10 minutes

15 minutes to prepare

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit and brush a muffin tray with coconut oil spray.

  • Combine butter, erythritol, stevia, and vanilla essence in a medium mixing dish. Mix until creamy with a hand mixer.

  • Whisk in the eggs and sour cream until thoroughly combined.

  • Combine the coconut flour, flax seed, baking powder, and salt in a mixing bowl. Mix until everything is well blended. Fold in the blueberries using a spatula.

  • Allow at least 30 minutes for the cookie dough to chill.

  • Scoop 1 heaping scoop of dough (approximately 2 tbsp) into each muffin hole with a cookie scoop for a total of twelve muffins.

  • Bake for 15-18 minutes, or until golden brown on the edges.

  • Allow 15 minutes for cooling before handling.

  • For up to one week, store in an airtight container in the refrigerator.
