  • Slices of one little eggplant, 1/8 inch thick
  • 2 pieces of thinly sliced zucchini
  • 3 slices of 1/8-inch-thick Roma tomatoes
  • 4 tablespoons of olive oil
  • 4 minced garlic cloves

  • Use the remaining olive oil to brush.

  • Vegetables should be roasted for 40 minutes in the oven to get tenderness.
